Three airport concession contracts approved

LOS ANGELES - After several delays, a divided Board of Referred Powers approved on Tuesday three retail concession contracts at Los Angeles International Airport, including one for a company that lost in the the bidding process.

The board plans to meet again next week to consider awarding fiercely contested food and beverage concession contracts.

"I am delighted to have made this much progress,'' Los Angeles World Airports Executive Director Gina Marie Lindsey said.

Airport officials began soliciting bids for new contracts in May 2009.

2 boxes Uncle Ben’s Whole Grain White Rice Chicken 
1 medium sweet potato
3 carrots
3 to 4 tablespoons water
2 1/2 cups cubed roasted or rotisserie chicken, ideally white meat
2 1/2 cups store-bought tomato sauce
3 1/2 cups shredded part-skim mozzarella cheese, divided
1/3 cup grated Parmesan cheese
 
 
Prepare rice as instructed on box.
Preheat oven to 375°F and spray a 13 x 9-inch baking dish with oil.

The big easy jambalaya

Prep Time: 15 minutes Cook Time: 35 minutes Yields: 6 (1 1/3-cup) servings
This spicy, flavorful dish is perfect for a Mardi Gras party, and it really is “big easy”. The recipe can be easily doubled to serve 12 by using 2 packages of Jambalaya Mix, doubling all the other ingredients and cooking in a Dutch oven or saucepot.
1 tablespoon olive oil
1 medium onion, chopped (about 1 cup)
1 each medium green and yellow bell pepper, chopped
1 can (14 1/2 ounces) fire roasted or regular diced tomatoes, undrained

New Orleans Beignets
Makes 15 beignets
1 whole egg
3 tablespoons superfine sugar
1/2 cup milk
1/4 teaspoon vanilla extract
3/4 cup flour
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2 Enza Jazz apples, cored and sliced into matchsticks
Oil for deep frying
Confectioner’s sugar for dusting
Separate egg and mix yolk with 2 tablespoons sugar. Stir in milk, vanilla and dry ingredients and mix until smooth. Leave batter mixture to rest in the fridge for 20 minutes.

Alabama
Freeman A. Hrabowski, president of the University of Maryland, Baltimore County, will address the annual African American Business Council luncheon on June 28. Hrabowski, who is chairman of President Barack Obama’s Advisory Commission on Education Excellence for African Americans, has a national reputation for his work studying the performance of minority students in math and science. Hrabowski, named one of the 10 best college presidents in the country by Time magazine, was a child leader in the Civil Rights Movement in Birmingham in the 1960s.
 

Arkansas
The Liberty Counsel filed a motion and a brief in United States District Court for the Eastern District of Arkansas seeking to intervene on behalf of a Concepts of Life crisis pregnancy center to defend against a suit filed by the American Civil Liberties Union and the Center for Reproductive Rights. The groups seek to impose a permanent injunction before the Human Heartbeat Protection Act goes into effect July 18. Liberty Counsel also filed a brief opposing the ACLU’s request for an injunction. The “Heartbeat” bill states that when a woman seeks an abortion at or after the 12th week, doctors must test for a fetal heartbeat before an abortion is performed and inform the pregnant mother that the child in her womb has a heartbeat. If a heartbeat is detected, a woman cannot have an abortion, except in cases of rape, incest, and if a mother’s life is in danger. “As we promised when the legislation was introduced, Liberty Counsel will defend this law without reservation for the people of Arkansas, born and pre-born,” said Matt Staver, founder and chairman of Liberty Counsel. “No right is more foundational than the right to life. Without life, all other rights are irrelevant,” concluded Staver.
