Easy. Portable. Crowd-pleaser. Potluck recipes for a large gathering need to hit on all marks, but especially the pleasing part

This Oriental Ramen Salad hits the mark on many levels:

• It’s crunchy with a creamy dressing.

• The creamy dressing is made with fat-free evaporated milk, providing rich, creamy flavor but no fat.

• The component parts can be made ahead, stored separately, and transported to the party, so the salad can be tossed together at the last minute.

• It can also be boosted to entrée status with the addition of pre-cooked chicken pieces or grilled shrimp.

This Cinco de Mayo, gather the whole family together and enjoy a true Mexican fiesta like Mama Ortega would have thrown over 100 years ago. With mariachi music, dancing, piñatas and traditional homemade Mexican meals, Mama’s fiestas were always a favorite with family, friends and especially her 13 children!

The flavors and smells of Mama’s homemade meals still taste great today, but are easier to create - and more fun to eat! Her legendary meals inspired today’s convenient and great tasting Ortega Mexican products. Achieve authentic fiesta flavors by using crisp and crunchy Ortega taco shells made with whole kernel corn, topped with slow simmered Ortega Taco Sauce and authentic fire-roasted green chiles. Ortega’s zesty Mexican seasonings and fresh-tasting salsas are perfect for adding flavor to your favorite snack, casserole, dip or soup!

(Family Features) Busy moms everywhere keep an open search for recipes that fit these top qualifications - easy to prepare or make ahead, and a taste the kids will love

To prepare, simply brown lean ground beef until no longer pink, add enchilada sauce, beans and corn, layer with corn tortillas, then bake.

This recipe is a favorite of Julie Ellingson, a busy mom of four and a fifth generation North Dakota beef producer. “I want meals that are nutritious and provide the strength needed for all we do,” says Ellingson. Her advice: take advantage of the make-ahead option and simply bake, then add a green salad on the side plus fruit for dessert.
